Shredded Chicken

INGREDIENTS

Chicken thighs or breasts (Thighs with skin on will have the best flavor, if you are scared of meat, start with breasts or no skin no bone thighs

Sea salt

Lemon, lime or apple cider vinegar

Cajun seasoning (or any seasoning you fancy)

INSTRUCTIONS

  1. Turn the InstaPot on slow cook

  2. Sprinkle a tablespoon of olive oil on the bottom of the pan.

  3. Place raw chicken in the crock pot and sprinkle with sea salt and cajun seasoning.

  4. Cover with a lid.

  5. Allow to cook for 4 hours, depending on your day this could go less or more.

  6. Shred the chicken 30 minutes before eating, remove the lid & let it crisp up a little.

  7. I like to put the InstaPot on saute mode to encourage crispness. Sometimes there will be a lot of liquid in the pot… you can pour this out or allow it to evaporate.

  8. Once you have reached your desired crispness - enjoy with a side of veggies and a salad.

There are so many variations of this and it depends on how much meat you use etc... Try it out it is a staple in my house!
