Fudge bites

INGREDIENTS

1 cup packed with whole pitted dates (you can also use unsulfured apricots)

2 cups raw walnuts

6 Tbsp cacao powder

3 Tbsp hemp seeds (plus more for outside of bites)

1/4 tsp sea salt

3 Tbsp creamy almond butter (or other nut or seed butter)

1 Tbsp coconut oil (melted) or MCT oil

INSTRUCTIONS

  1. Place dates into your food processor and pulse until well mixed into a chunky puree. Scrape out and set aside.

  2. Next, add walnuts to the empty food processor and pulse into a chunky walnut meal.

  3. Add cacao powder, hemp seeds and sea salt into the food processor. Pulse a few more times to combine. Be careful not to over mix.. it is best when some of the nuts are chunky!

  4. NOTE: if you have a small food processor you can just mix everything together in a bowl after the walnuts are processed.

  5. Now, add the dates, almond butter and melted coconut oil into food processor (or bowl)

  6. Mix/pulse/stir all ingredients until well combined. You should have a dough-like consistency. If too moist, add a bit more cacao powder or hemp seeds. If too dry, add coconut oil or almond butter.

  7. Scoop out 1 tablespoon per ball. You should end up with about 20 balls.

  8. Grab a small dish and fill with hemp seeds. Roll your balls into the seeds to coat outside.

  9. Store extra bites in a sealed glass container in the refrigerator up to 1 week or in the freezer up to 1 month.
