On The Trail Cookies

An easy to make, delicious treat that is made with real ingredients! I love eating these when I am out ski touring, mountain biking or after I get out of the surf.

This recipe makes roughly 8 cookies

INGREDIENTS

  • 1 ½ cups of unsweetened shredded coconut

  • ¾ cup of almond flour

  • ¼ tsp of salt

  • a tsp of baking powder

  • 1/3 cup of mashed banana or maple syrup

  • 1 egg or flax egg

  • 2 TBSP of unrefined coconut oil (warm to make liquid)

  • 1 tsp of pure vanilla extract

  • ½ cup of dark chocolate chips (look at the ingredients and buy chips without dairy or added fillers)

INSTRUCTIONS

  1. Preheat oven to 350F or 180C

  2. In a medium sized mixing bowl mix together the shredded coconut, almond flour, baking powder and salt

  3. In a separate small mixing bowl, whisk together the egg, mashed banana, coconut oil (cool slightly after warming to become liquid) & vanilla extract

  4. Pour the wet ingredients into the dry ingredients and combine

  5. Add the chocolate and stir until evenly distributed throughout

  6. Divide and shape into 8 cookies with hands

  7. Place onto cookie sheet about 1 ½ inches apart

  8. Bake for 15 - 20 minutes until golden brown (different ovens require different times for these cookies)

  9. Be careful not to overcook them, they go from perfect to burnt really fast

  10. Take out of the oven and allow them to firm up for a few minutes on the cookie sheet then transfer to baking rack or a plate to cool

  11. Enjoy after they have hardened up but are still warm
